Carlos Monteiro’s November WN commentary on ultra-processing and its implications for nutrition science, and for what we are best advised to eat and drink, is being read and discussed all over the world. Starting this month he develops his thesis, with examples. The first two examples are an updated reprint of what we published last month on our website home page. The second two examples, on the Food Pyramid, and on bread, are new. | |
